Butternut Squash & Cannellini Soup

Hello, again! It's been awhile, hasn't it? I've been hibernating and trying to focus on studying for the LEED test in December. Hot chocolate and marshmallows are helping.

I've also been l-o-v-i-n-g making soup lately. You must try this recipe for
Butternut Squash & Cannellini Soup with Bacon from Bon Appetit. I had some for dinner last night, for lunch today, and still want some more. Just trust me.

I'll admit, it's not the prettiest soup, but it is delicious. I wish you could all stop by and I'd feed you some!

Can I tell you how much this post is rocking my Sunday?!?
First, I jut love your illustrated recipe cards. But you already knew that. Then, there's the issue of the butternut squash that's been sitting on my counter for several days now, not offering much inspiration. Add to that the fact that there's bacon in the soup (holy cow - or pig - I LOVE bacon). And end on the fact that we're going to be out in the cold for several hours today for Barry's bike race. Your soup is the perfect answer to ALL of this, my dear! Thank you, thank you, thank you!

Thanks for the e-mail. I had everything ready to go (sans bacon + chicken stock) + then I forgot about it. I made a completely different soup (well, not COMPLETELY).

oh I love butternut squash soup. I roast the squash on the grill and it adds such depth to the soup. But I never add bacon. mmm bacon. Everything tastes better with it... right?

I keep meaning to email you about your LEED certification. I'm looking into this for myself and would love to hear your thoughts.

Get the boots as a gift to yourself when you're done with your test!
