Cheddar Corn Chowder

Here's a new soup for my bacon loving friends. Sorry to my vegetarian pals, but you're probably better off anyhow. This soup cannot be good for the arteries.

This is The Barefoot Contessa's
Cheddar Corn Chowder . It makes a large amount. I halved the recipe and still had a ton left over. The only thing I would recommend is to use low sodium chicken broth and add the salt as you go. I used the amount suggested, and it was a bit too salty for my taste.

I also used red potatoes to add a bit of color and pretend it was healthy...but I didn't really believe myself. Enjoy!

I made your last soup yesterday and blogged it over my way. When we make it through that one, I'll have to give this one a go! I do love that bacon! (We add one slice per bowl of soup 'round these parts...)

I'm PSYCHED to see another soup recipe that calls for bacon. Normally, I can't keep the stuff in the house, but when I have a special recipe that requires it, it's a perfect excuse to go hog wild (pardon that painful pun). Happy weekend!

This sounds lovely! Thanks for sharing the recipe, I practically live off soup in the winter, so will definitely be trying this!

But the recipe card looks amazing, as usual!

Bruce is personally singing "Santa Clause is coming to town" as I type this (YES! to ME personally)

I have made Ina's cheddar corn chowda many many times. It's a favorite. But I substitute the cream and a lot of the other fattening stuff in it and it still tastes good.
